Ingredients

  • 3/4 cup cooked rice
  • 1 pound ground turkey - 93% lean
  • 1/3 cup broccoli - finely chopped
  • 1/3 cup carrot - finely chopped
  • 1/3 cup spinach - finely chopped
  • 1/2 teaspoon garlic powder
  • 3 teaspoons sesame oil - divided

Instructions

  1. 1.PREREQUISITE STEPS: Preheat oven to 350°F. Line baking sheet with parchment paper. Place small oven-safe dish with water on same rack for moisture.
  2. 2.FOOD PREP: Add vegetables (broccoli, carrots, spinach) to food processor and pulse until finely chopped (6-8 pulses).
  3. 3.Heat 1 teaspoon sesame oil in pan over medium heat. Sauté chopped vegetables for 5 minutes until softened.
  4. 4.Add cooked rice, remaining sesame oil, and garlic powder to sautéed vegetables. Mix well and let cool slightly.
  5. 5.Gently mix ground turkey into vegetable-rice mixture using hands - do not overwork the meat.
  6. 6.Using wet hands or small ice cream scoop, shape mixture into small balls about 1-inch diameter.
  7. 7.Place meatballs on prepared baking sheet. Bake for 20 minutes, flipping carefully halfway through.
  8. 8.SERVING: Let cool to appropriate temperature before serving to toddler. These are perfect finger foods for practicing self-feeding.
