Ingredients

  • 1 cup cooked quinoa - 130g
  • 2 tablespoons almond flour - 15g
  • 1 cup sweet potato - mashed (240g)
  • 1/2 cup mozzarella cheese - shredded (50g)
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano

Instructions

  1. 1.PREREQUISITE STEPS: Preheat oven to 375°F. Grease baking sheet or line with parchment paper. Ensure sweet potatoes are well-mashed and quinoa is completely cooled.
  2. 2.FOOD PREP: In large bowl, combine mashed sweet potatoes, cooked quinoa, shredded mozzarella cheese, garlic powder, oregano, and almond flour.
  3. 3.Mix ingredients thoroughly until well-incorporated and mixture holds together when pressed.
  4. 4.Form mixture into 8 even-sized balls using your hands, then press down into patties using your palms.
  5. 5.Place patties on prepared baking sheet with space between each one.
  6. 6.Bake for 25-30 minutes, flipping carefully halfway through cooking time.
  7. 7.SERVING: Let patties cool to appropriate temperature before serving to toddler. These make excellent finger foods.
