Ingredients

  • 1 cup rolled oat
  • 1 1/2 teaspoons baking powder - aluminum-free
  • 1 medium banana - ripe
  • 1/2 cup unsweetened applesauce
  • 3/4 cup kefir - whole fat plain
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 3/4 cup blueberry - fresh or frozen

Instructions

  1. 1.PREREQUISITE STEPS: Preheat oven to 350°F. Grease 12-cup muffin pan or line with paper liners.
  2. 2.FOOD PREP: Add rolled oats to blender first, then add banana, kefir, unsweetened applesauce, egg, vanilla extract, baking powder, and lemon zest.
  3. 3.Blend until completely smooth, about 30-45 seconds. Let batter rest for 2-3 minutes.
  4. 4.Stir in half of the blueberries gently with spoon.
  5. 5.Pour batter evenly into prepared muffin cups, filling each about 2/3 full. Top with remaining blueberries.
  6. 6.Bake for 25-30 minutes until tops are golden and toothpick inserted in center comes out clean.
  7. 7.SERVING: Cool completely in pan for at least 10 minutes before removing. Serve whole or halved for toddler finger food practice.
  8. 8.BATCH COOKING TIP: These muffins are perfect for breakfast, snacks, or lunch boxes. Makes approximately 12 toddler portions. Freeze individually for easy portioning.
